Sacred. Dry London Gin Size:70clHighgate, London 40% The recipe for Sacred's Dry London Gin is loosely based on one from the late 17th Century which comprises of 12 carefully selected, fresh (never dried) organic botanicals, including: juniper, the backbone of all London Dry Gins, from Bulgaria; coriander, from India; fresh cut oranges from Spain, exotic cardamom from Guatemala and Boswellia sacra, otherwise known as Hougary Frankincense after which it is named. The botanicals are

light on tannins

before being decanted into 320 litre amphoras to ferment (wild yeasts used) and aged for 12 months

The wine is then aged in botti (large 20hl French oak barrels) for 12 months and then a further 12 months in cement tanks before bottling

a fine and intense vintage

The grapes were hand-picked in small crates

2018 was an unusual vintage

The wine remains on the lees until May

so the grapes have more acidity: this balances the ripeness that the sand and limestone of Montalupa give the Viognier
